Since getting invited to take the Simply Sesame Blogger Recipe Challenge, I received three jars of Simply Sesame creamy spreads. Simply Sesame is an ALL natural, certified non-GMO, vegan, and palm oil free, gluten-free, peanut free, cholesterol free, low in calories, sugar, and sodium, made from sesame seeds. Yes, it is similar to peanut butter, but what makes this even better are the available flavors: Pure Roasted Sesame, Vanilla with Almond Bits (Sugar Free Available), Pistachio Morsels and Cardamom. These are all pure energy and can be made into a delicious cookie for a  great morning treat.

This product was just what I needed for this weekend filled with deadlines and volunteering to help with the Louisiana marathon. I baked a batch of cookie crisps using the Simply Sesame Vanilla with Almond Bits because I already had a bag of almonds and some coconut leftover from Christmas baking and I just love almonds and coconut together. I knew working a water station for the marathon required hours of non-stop filling cups for the runners. The tasty snack of the Simple Sesame cookie crisp was just what was needed to sustain our team through the entire race. Our energy never sagged.

Simply Sesame Vanilla Coconut Almond Cookie Crisps

Ingredients

  • 1 TBSP sugar
  • 2 TBSP butter, room temperature
  • 1 egg
  • 3/4 cup flour
  • 3/4 tsp baking powder
  • 1/8 tsp salt
  • 1/2 cup almonds, chopped
  • 1/4 cup sweetened coconut flakes
  • 1/2 cup Simply Sesame Vanilla with Almond Bits Spread

Instructions

  1. Preheat oven to 350*
  2. In a mixing bowl, cream butter and sugar with wooden spoon until light and fluffy. Add egg. Beat until smooth.
  3. In a separate bowl, sift together flour, baking powder, and salt. Add to butter mixture.
  4. Using a rubber spatula, mix in Simply Sesame Vanilla with Almond Bits spread.
  5. Fold in nuts and coconut until fully incorporated into dough.
  6. Drop by teaspoons onto ungreased cookie sheet. Gently flatten with back of spoon until thin.
  7. Bake 10-12 minutes. Let cool.

To COOK IS TO CREATE:  Try these cookie crisps with other nuts or chocolate chips. How about adding granola instead of the nuts and coconut? Think about making these cookie crisps with the different Simply Sesame flavors. You can order straight from their website.

    Simply Sesame Vanilla Coconut Almond Cookie Crisps…….WOW! This HAS to be delicious with all of these yummy ingredients. I baked them and I must tell you they are absolutely scrumptious and curbs the “hungries”! Fantastic recipe and it has become my family favorite. I must comment on the “Open Sesame” phrase….most interesting. 🙂 🙂
