It’s National Ice Cream Day this Sunday. Have you checked your area for any free ice cream offers? It must be the heat making people crazy here for there are tons of free ice cream offers in our area. In fact, if I plan my day right, I could have ice cream for breakfast, lunch, an afternoon pick-me-up, dinner, and a late night snack! I admit I usually have to be in the mood to splurge on ice cream, but free ice cream will quickly persuade my mood!

Know what else quickly persuades my mood for some ice cream? A simple three ingredient no churn smooth and creamy ice cream. I had leftover coconut milk from National Pina Colada Day and I was simply going to freeze it for later use, but then I thought of pina colada ice cream. If you still have some pineapple simple syrup leftover from last week’s pineapple frosting just substitute it for the vanilla extract. If not, no worries on this island ice cream vacay, use pineapple juice instead. You can even add  minced fresh pineapple.

This ice cream treat is a great one to keep on hand for those recipes that leave you leftover with half can of coconut milk.

Leftover Coconut Milk Ice Cream

Ingredients

  • 1 cup leftover coconut milk, sweetened or unsweetened
  • 1 TBSP honey
  • 1 tsp vanilla or 1 tsp pineapple juice
  • Optional add ins: chocolate chips, nuts, fresh fruit

Instructions

  1. Add coconut milk, honey, and extract or pineapple juice to a bowl. Mix well.
  2. Pour contents into a shallow freezer container. Freeze for 3 hours.
  3. Using a metal spoon, break up mixture and transfer to a food processor. Pulse until smooth.
  4. Stir in any optional add ins. Put mixture back into freezer container. Freeze for at least 1 hour.
  5. Enjoy!

Put on Your TO COOK IS TO CREATE Thinking Cap: No honey? Use maple syrup or even peanut butter. Chocolate or caramel lover? Use chocolate syrup or caramel instead, or try both! No vanilla extract? Use 1/2 teaspoon of almond extract or better yet, use vanilla almond milk! Want an adult ice cream? Add some rum or bourbon in place of the extract. Think of all the mix-in possibilities like chocolate chips, butterscotch chips, M & M’s, fresh fruit, nuts-pecans are my favorite. Want a lighter cooling treat? Try an Old-Fashioned Soda Sorbet.

FOOD FUN: Did you know that some food photographers often use mashed potatoes as a stand-in for a scoop of ice cream? It’s easy to color, flavor, and all toppings stick nicely to it, and the best part-no melting. I always look twice at it and wonder if it is the real deal or mashed potatoes. See my dripping scoop?     Pineapple coconut ice cream….WHAT’S NOT TO LIKE!!! Great easy recipe and oh so delicious. Can’t get enough of this cold stuff in the sweltering Summer heat! YUM …… 🙂
