I’m only a breakfast person on the weekends. I know that sounds crazy, but that’s me. During this pandemic however, I have started adding brunch on Mondays as well. Brunch Monday–has a ring to it, doesn’t it? It does make the week start off so much better! Maybe we can all start a new trend? My new Brunch Mondays menus may be a bit lighter and quicker than my weekend brunch menus, because I have to go to work and not back to bed! These rolls are perfect for a quick bite, thanks to leftover rolls.

Easy Orange Almond Rolls

These Orange Almond Rolls are perfect for a Brunch Monday or any day of the week because they are an easy fix, require no eggs or milk, and will be ready to enjoy in less than 15 minutes. Yes, this recipe is finished from start to finish less than 15 minutes and bonuses-it uses one whole orange and uses leftovers rolls or even stale bread. In fact, the one lone orange in my drawer was the inspiration for this recipe modeled after my Sticky Rolls–they use leftover rolls, too.

Remember them? Leftover RollsIn a non-stick muffin tin, place a dab of butter, 1-2 tsp maple syrup (or 1 tsp corn syrup), chopped nuts, and if desired, 1 tsp brown sugar & cinnamon. Place rolls, top side down over mixture, press down. (Bottom of rolls too brown already? Cover pan with foil. Rolls too big? Cut in half.) Bake at 400* for 10 minutes. Let cool briefly. Carefully remove rolls & spoon any extra goodness over rolls.

Orange Almond Rolls

Ingredients

  • 4 rolls
  • 1 TBSP butter, melted
  • 1 orange
  • 1/2 cup cane sugar or less depending on taste
  • 1/4 cup sliced almonds, crushed
  • 1 cup powdered sugar

Instructions

  1. Preheat oven to 400*
  2. Juice orange and grate the rind. Set aside.
  3. Use a pastry brush and brush 4 wells of a muffin tin with the butter.
  4. Add 1 TBSP of almonds in each well.
  5. In a bowl, combine orange rind, sugar, and slowly stir in orange juice to make a slurry. Reserve remaining juice.
  6. Turn rolls over and over in orange mixture, coating all sides well, Put each roll, top side down into wells with almonds. Give a gentle press.
  7. Bake for 8-10 minutes until browned.
  8. In a bowl, add powdered sugar and slowly stir in remaining orange juice until the desired consistency is reached for the orange glaze.
  9. Gently remove each roll and drizzle with glaze
  10. Refrigerate any leftovers. Gently warming to enjoy again.

Put on Your TO COOK IS TO CREATE Thinking Cap: No rolls? Use stale bread. Simply cut into sticks, dip, and roll in almonds and bake on a parchment lined sheet until lightly browned. Want to up the flavor? Add some spices to the orange juice mixture. Try cinnamon, ginger, or nutmeg, cloves, or even some vanilla. Want to up the ante on the glaze? Raid the liquor cabinet and grab your favorite cordial and use to make a boozy glaze. I love Frangelico! No almonds? Use pecans or walnuts. Still have some rolls to use?
