I recently participated in the 2019 Healthy Solutions Spice Blends Recipe Challenge. This year’s Challenge theme was “Diner Food”. As a Southern girl, the first thought that came to my mind was biscuits and gravy. Then as a cheese lover, I couldn’t help but think macaroni and cheese for I always get a side of macaroni and cheese at a diner if not ordering breakfast. To me, country fried steak is just not the same without a side of macaroni and cheese. So as the thoughts of country gravy and mac and cheese swirled around inΒ  my head, it became very clear what my entry would be. I had always made macaroni and cheese biscuits with leftover mac and cheese and now I was going to “up the ante” with a Cajun gravy using the Healthy Solutions Cajun Seafood spice blend.

The co-sponsor of this challenge was the Red Arrow Diner , yes, that famous New Hampshire diner since 1922. The Red Arrow Diner is so famous it was even in a recent Jeopardy clue? The clue: “White House hopefuls visit the Red Arrow Diner in this New Hampshire city that’s on the Merrimack River.” The answer: “What is Manchester!” Did you get it correct?

The judges assembled at the diner to decide the winner from the five finalists. It was such a treat for me to see the judges’ reactions as they tasted my dish. They certainly ate the biscuits and gravy a lot more daintily, gently dipping a bite of biscuit into the gravy, as opposed to most of us down south where we smother the biscuit with gravy. I wanted to shout, “Pour the gravy OVER the biscuits” but I didn’t for all the judges seem to be happily nibbling away.

Macaroni, cheese, biscuits, and gravy, what’s not to love? Obviously not much. I am so proud to say that these biscuits honored me a 3rd place win in the challenge. I know eating leftovers are always a win for me, but I’m so delighted others shared in my love of leftovers. Some may say there is no such thing as leftover macaroni and cheese. If that’s true in your house, simply “hide” a portion on the side to make these biscuits.

These biscuits are quite filling, so I call this recipe “Big Cheesy Mac Attack!” The leftover mac and cheese is cut into the flour the same way you would butter. I like the ease of drop biscuits, but if you prefer, dough can be rolled out to 1/3 inch thickness onto a lightly floured board and cut with a small biscuit cutter.

Leftover Mac and Cheese Biscuits

Ingredients

    For the Biscuits:
  • 1 cup sifted all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. Healthy Solutions Cajun Seafood spice blend
  • 1/2 cup cold leftover macaroni and cheese
  • 1/3 cup milk
  • 2 tbsp. butter, melted
  • 1/4 cup grated cheddar cheese
    For the Cajun Sausage Gravy:
  • 1/4 cup crumbled cooked breakfast sausage
  • 1 tbsp. butter
  • 1 tbsp. flour
  • 1 tsp. Healthy Solutions Cajun Seafood spice blend
  • 1 cup milk

Instructions

    For the Biscuits:
  1. Preheat oven to 450℉. Sift flour, baking powder, salt, and Healthy Solutions Cajun Seafood spice blend into large bowl. Cut in cold macaroni and cheese until it resembles fine crumbs. Slowly add milk until soft dough is formed.
  2. Drop by tablespoons onto a parchment lined baking sheet.
  3. Bake at 450℉ for 12-15 minutes or until golden brown.
  4. Brush with melted butter and sprinkle with cheese.
    For the Gravy:
  1. Add sausage and butter to a small saucepan. Heat on medium until butter is melted.
  2. Whisk in flour and Healthy Solutions Cajun Seafood spice blend. Keep whisking and slowly add milk. Continue to cook and whisk until gravy is thickened.
  3. Serve gravy on side for dipping or on top of biscuits.

Notes

If preferred, dough can be rolled out to 1/3 inch thickness onto a lightly floured board and cut with a small biscuit cutter.
